Pumpkin season is fast approaching, and I don’t know about you, but I am pretty excited to switch things up with different spices and flavours. What better way to do just that than with some delicious baked goods?!
One thing that I love is chocolate (it is my kryptonite after all) and I wanted to see if I could combine chocolate with a fall favourite - pumpkin - in a deliciously healthy treat
These brownies contain little added sugar and are packed full of fiber, protein, and chocolaty goodness; They are hella delicious and hope that you give these brownies a try!
Makes 12 Brownies
Ingredients
1 1/2 cups black beans
1/3 cup cocoa powder
1/2 cup oats
1/2 cup buckwheat flour or oat flour
Pinch of Salt
1/8 cup sugar or maple syrup
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
3/4 cup pumpkin puree
1/2 cup almond milk
1 tsp vanilla extract
1/2 cup chocolate chips
Directions
Preheat your oven to 350 degrees Fahrenheit
Grease an 8x8 baking pan or line with parchment paper
In a food processor combine black beans, cocoa powder, oats, buckwheat, salt, sugar, baking powder, cinnamon, nutmeg, ground ginger, pumpkin puree, almond milk, and vanilla extract.
Process until the batter is nice and smooth.
Transfer the mixture into a bowl and add in ¼ cup of the chocolate chips and mix until combined.
Transfer your batter into your 8 x 8 baking dish.
Sprinkle the remaining ¼ cup of chocolate chips on top of the batter.
Bake in the oven for 15 - 18 minutes.
