Mint Chocolate Chip Nice Cream

I remember as a kid having dinner at my aunt's house where there was never a shortage of ice cream, especially the minty chocolate chip variety. It was something that always had me looking forward to dinner because what kid wouldn't want ice cream? Needless to say, there were some pretty fond memories whenever we got to visit my aunt and uncle's place.


Since those days, it's been a heck of a long time since I have had this flavour of ice cream (I'm talking 10+ years), and my life has been meaningless since.

All jokes aside, recently our friends gifted us with some fresh mint from their garden, for which I am incredibly thankful for. This gift provided the inspiration to create this wonderfully minty and chocolatey nice dream.


This is so simple to make and uses only a handful of ingredients. To be honest, I am not sure how I haven't thought of this before, but I am certainly not complaining now that I have this back in my life!




Ingredients

  • 2 - 3 medium bananas, frozen

  • A handful of fresh mint (you can sub in peppermint extract instead)

  • 3 tablespoons of chocolate chips

  • Plant-based milk, as required

  • 1 1/2 teaspoons matcha (optional)


Directions

  1. Add bananas, matcha, and mint to a blender or food processor and blend until smooth. If required, add a splash of plant-based milk to help the blending process.

  2. Fold the chocolate chips into your ice cream and serve.

Easy-peasy, am I right!?
