Ginger Molasses Cookies

Anyone who knows me is well aware that I cannot deny anything sweet, especially when it comes to baked goods. So when it comes to making something like cookies, it can be a treacherous game, as one cookie turns into two, which turns into three... which turns into five all in one sitting. So while I try to commit myself to one or two cookies, I know that it will inevitably turn into more, because FRESHLY MADE COOKIES!


The spices in this recipe are truly delightful and are incredibly inviting from the moment that you take your first bite. These cookies are nice and soft and fluffy and are just all things magical.


The really wonderful thing about this recipe is that it has spelt flour, which has easily become one of my favourite flours to bake with, as it is so light and airy. Therefore, whenever you want to bake something soft in texture, spelt makes a great addition.

Ingredients

Makes 20 - 24 cookies


  • 1 tablespoon chia seeds

  • 3 tablespoons water

  • 1 cup of all-purpose flour

  • 1 cup of spelt flour

  • 1/4 cup cocoa powder

  • 2 teaspoons ground ginger

  • 1 teaspoon cinnamon

  • 1 teaspoon baking soda

  • 1/4 teaspoon ground clove

  • 1/2 teaspoon xanthum gum or cornstarch

  • Pinch of salt

  • 1/2 cup of sugar

  • 1/4 cup molasses

  • 1/4 cup pumpkin puree

  • 1/4 cup apple sauce

  • 3/4 cups of chocolate chips


Directions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Combine the chia seeds and 3 tablespoons of water in a small dish and set aside

  3. In a medium bowl, combine both flours, cocoa powder, spices, baking soda, xanthan gum, and salt

  4. In a separate bowl, combine the chia egg, sugar, molasses, pumpkin puree, and apple sauce.

  5. Add the dry ingredients to the wet ingredients and mix to combine. You will have to get your hands involved to thoroughly combine the mixture.

  6. Add the chocolate chips and use your hands to combine into the mixture

  7. Roll your cookie dough batter into 1 inch balls and place on a baking sheet that is lined with parchment paper, and flatten with your hands

  8. Bake for 12 minutes

  9. Once baked, place cookies on a cooling rack
