If you find that you are short on time and wanting something that is quick and easy, you really can't get much easier then these guys!
These quesadillas, are simple to make with a bit of a twist! Having to keep an eye on our saturated fat intake, we opted to switch out a large portion of cheeze with pureed sweet potato and let me tell you, it's a deceptively tasty combination! These quesadillas also pair well with a simple bean salad that you can also whip up in a flash.
Makes 4
Ingredients
2 sweet potatoes, peeled and chopped
4 tortillas
1/3 cup vegan cheeze (such as Daiya)
Sauteed veggies (such as onion, garlic, spinach), optional
Directions
Place sweet potato in a pot along with water, and boil until cooked.
Drain sweet potato and place in a blender or food processor and blend until smooth (or simply mash).
Spread pureed sweet potato over the tortillas
Top with some shredded cheeze
Top with sauteed veggies if you opted to make some.
Fold tortillas in half.
Cook over a frying pan until golden brown, and flip. Cook the other side until golden brown.
Serve :)
