Anyone who knows me knows that I have the biggest sweet tooth and crave anything chocolate! As such, there aren't many healthy options that really satisfy my sweet tooth when it kicks in. Therefore, I am left searching and trying new recipes in hopes of creating something that will satisfy any chocolate craving, all the while packing some nutritional value. What I love most about this recipe is that it takes no more than five minutes to make and only requires a handful of ingredients. Lastly, topping it with some berries brings this pudding to a whole new level!
Makes 2 Servings
Ingredients
1 block of silken tofu, drained
1 - 2 tablespoons of cocoa powder
1 - 2 tablespoons of maple syrup
Dash of salt
1 tablespoon ground chia seeds or flax (optional)
1 scoop of chocolate protein powder (optional)
Fresh berries (optional)
Directions
Add all ingredients into a blender and process until smooth.
Separate the pudding into two separate containers and put them in the fridge to set for two hours.
Alternatively, if you can't wait - dig in!
Top with fresh berries (optional)
Notes:
If you prefer a thicker consistency, add some ground flax or chia seeds. Doing so will not only thicken the recipe but also boost the protein and omega content of the pudding.
Personally, I always add protein powder to my pudding but it is not a make or break deal. So if you don't have any protein, don't worry and carry on with the rest of the recipe!
